Recipe I use often to make lunches I take to work ... Yum ...
Of course you can mix ground beef with the venison if you are planning on serving to those less fanatic about the venison ...
Venison Meatballs
Ingredients:
- 2 lbs. ground venison
- 1 egg
- 1 cup oatmeal
- 1 tsp. lite creole seasoning
- 1 cup diced tomatoes (Roma is the best)
- 1 bottle spaghetti sauce
- 1 Onion
- 1 Bell pepper
Directions:
- Mix venison, oatmeal, egg, creole seasoning, make in small balls
- Place in a large frying pan with a small amount of cooking oil, fry one side, and carefully turn over
- Lightly sautee the onion, pepper, and diced tomatoes in another frying pan
- Combine the sautee mix with the meatballs in the large frying pan
- Let it simmer for 1 hour or until peppers and onions are done
- When it sets for a while it absorbs a lot of the liquid
I put mine over a bed of cooked Basmati rice
