Made in a pressure cooker.
3 pounds of potatoes, washed and cut into cubes. Leave the skin on.
1 large onion diced
4 celery stalks stripped and diced
1 can of beef broth
Put all ingredients into pressure cooker along with 3 cups water. Cook under pressure for 10 minutes.
Let pressure reduce naturally and open cooker.
Now I use an immersion blender to puree my soup and add 1 cup of heavy cream and salt and pepper.
You can use a regular blender but it's kinda messy.
Pour into bowls and we put bacon bits, shredded cheese, and croutons on ours. Pretty good stuff.
Treat it like you would a baked potato.

I was sceptical about the pressure cookers, but, we love ours. Makes the best camp stew, chilli, beef stew. And it cooks so quick. You won't be disappointed if you get one.

Hey Ricky Bobby, we got ours from QVC. Best I remember it was right around $100. I'll post a picture as soon as I get home, next hour or so.

Thanks Bobwhite. For some reason I thought SDW had the cockpot. Walmart has a 6 quart for 29.99 for stove top. Is yours a plug in the wall pressure cooker ? Its nicebobwhite wrote:Here you go R. B.
